Coconut & Vegetable Curry

Coconut & Vegetable Curry

  • 2 tsp. canola oil
  • 14 oz. firm tofu, drained and cubed
  • 1/2 cube Edward & Sons Not-Chick’n or Garden Veggie Bouillon
  • 1 cup water
  • 1 lb. sweet potatoes, cubed
  • 13.5 oz. can Native Forest Organic Light Coconut Milk
  • 1 tsp. (or more) red curry paste
  • 1/2 lb. frozen, organic mixed vegetables
  • Opt: salt
  • 2 tsp. lime juice
  • Cooked brown rice, quinoa, or other whole grains
  • Garnish: chopped cilantro

1. Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat. Add tofu cubes and saute for about 5 minutes or until browned. Remove from skillet and set aside.
2. In a 2-qt. pot, heat bouillon and water over medium-high heat. Add sweet potato cubes and saute for 5 minutes or until browned.
3. Add coconut milk and curry paste to taste. Bring to a boil. Reduce heat, cover, and simmer, stirring occasionally about 4 minutes, or until sweet potato cubes are tender.
4. Add tofu and frozen mixed vegetables; return to a simmer and cook, covered, stirring occasionally for about 3 minutes or until the vegetables are tender. Adjust seasonings if necessary.
5. Add lime juice. Serve over whole grains. Garnish with cilantro.
Serves 4
