Here’s a great recipe featuring our Let’s Do…Organic® Coconut Flour and Native Forest® Sliced Peaches:
Coconut Flour Banana Cranberry Fruit Bread
- 1 1/4 cups whole wheat flour
- 1/2 cup Let’s Do…Organic® Coconut Flour
- 1 tsp cinnamon
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup dried cranberries
- 1/4 cup oil
- 1/2 cup agave
- 3/4 tsp vanilla
- 2-3 mashed very ripe bananas
- 1/2 can Native Forest® Sliced Peaches
- 1 Tbsp flax dissolved and let sit in 3 Tbsp warm water
Preheat oven to 350º. Combine all dry ingredients in a bowl. In a separate bowl, mash the bananas and add the rest of the wet ingredients. Add the dry ingredients into the wet ingredients and stir well. It will be a thick batter.
Put into a greased and floured loaf pan. Bake for 45 – 50 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes in the pan, then transfer to a cooling rack and cool completely before cutting.
Makes 1 loaf.
