Potato Croquettes

Potato Croquettes

12 oz Potatoes
½ oz Frozen mixed vegetables (or corn or peas only)
1 cup Edward & Sons Organic Panko Breadcrumbs
1¼ cups Unbleached flour
½ cup Water
2 cups Vegetable oil
Salt and pepper to taste

  • Peel potatoes and soak in salted water for 5 minutes.
  • Boil potatoes about 15 minutes and drain.
  • Mash well and add mixed vegetables, salt and pepper.
  • Make about 1 1/2 oz. balls and cool.
  • Dissolve 1/4 cup flour with water.
  • Dredge the balls in the remaining flour and then dip in the dissolved flour.
  • Pour the panko onto a plate and roll the balls in it.
  • Heat oil to 350º and deep fry balls until golden brown.
  • Serve with soy sauce or other sauce of choice.
